Cold foods taste their best under the summer sun, bare feet dangling in the pool. They are easy to prepare and can often be more nutritious than their cooked counterparts. Come out to the backyard, and let’s prepare today’s recipe: the mango cucumber summer slaw.

This recipe is so simple that its list of ingredients is far longer than the instructions. It’s chock-full of vitamins, minerals, nutrients, and flavor.

Let’s get started!

Ingredients
The secret here is cutting each ingredient into thin slices.

½ cucumber

1 mango

1 cup red cabbage, shredded

1 cup of napa cabbage, shredded

¼ red onion

½ red bell pepper

1 carrot, shredded

Mint or cilantro

2 tablespoons of lime juice

1 tablespoon of rice vinegar

1 tablespoon of sweet chili sauce

½ tablespoon of honey

Sesame seeds

Salt to taste

Steps
Merge your wet ingredients into a small bowl.

Mix the thin slices of vegetables and herbs in a separate bowl.

We suggest that you add some of the dressing into the vegetable bowl and mix them well. Then, cover the bowl and put it in the refrigerator for a few minutes to lightly marinate.

Serve and put the dressing on the side for everyone to enjoy!
