You’re having friends over. The day is bright and lovely, warm, and with a breeze. No sooner have your friends arrived at your house than they’re all in the pool. You can wait, though, because you have something in mind for them.

We believe grills were made for ribs. It can be a challenging dish to prepare, especially because of how long it takes to cook the entire rib rack evenly. Fortunately, today’s recipe makes everything simple. Besides, the only way to get better at something is to do it, right?

The secret to ribs is in the dry rub. It ensures that the meat itself is tasty right out of the grill, so you don’t have to rely too heavily on the sauce.

Fire up that grill and preheat to high. We’ll bring it down in a moment.

Ingredients

Dry Rub (1 tablespoon each)

Packed brown sugar

Onion powder

Garlic powder

Black pepper

Paprika

Salt

Cumin

Chili powder

Mustard powder

BBQ sauce

And… Ribs! 3 pounds

Steps

If you’d like, you can silverskin the ribs before you get started. This means that you remove the outermost layer of the ribcage on both sides. Use a knife to help you out.

First, bring all the powdered stuff together and mix it very well—a closed jar helps.

Set your ribs onto a baking sheet and rub the powdered mixture thoroughly. Cover the rack very well, and don’t be afraid to pat to make sure the whole rack is covered. Let it marinate for a bit.

Let’s move on to the grill. Before we start, set a sheet of aluminum foil on the lower rack to catch any grease and avoid accidents and flare-ups. Then, set the ribs on the top rack or as far away from the coals as you can. Every grill is different, but what we’re trying to do here is cook the ribs on low heat for a long time. Close the grill and let them cook.

We suggest letting the ribs cook as undisturbed as possible. This way, the temperature will always be constant. You can check on it for your peace of mind and to make sure they’re getting enough heat, but let at least 20 minutes pass between checkups. About an hour into the cooking, the meat should easily pull away from the bone.

Brush the ribs with barbeque sauce and grill for five more minutes.

Serve the ribs! You can cut them yourself or leave them for the table to do as they please. Bring many, many napkins. Stay tuned to NAMCO and get the most out of your backyard.
