For 4 servings: 

 

Ingredients 
3 cups fresh corn kernels (when available, otherwise frozen or canned)
1 cup all-purpose flour
1 tablespoon white sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 cup diced yellow onion
1/4 cup chopped fresh chives
1/4 cup chopped fresh Italian parsley
2 large eggs, lightly beaten
1/2 cup milk
Canola oil for frying
Optional toppings and sides: sour cream, garlic aioli, poached eggs, powdered sugar, maple syrup


Instructions:
Mix flour, sugar, baking powder, salt, and cayenne pepper in a large bowl.
Add in lightly beaten eggs and milk. Stir together until the batter is smooth and well combined.
Add corn, diced yellow onion, chopped chives, and Italian parsley to the batter. Fold together until evenly mixed.
Heat canola oil in a heavy pot or deep fryer to 365°F (185°C).
Carefully drop spoonfuls of batter into the hot oil, working in small batches. Adjust the spoon size to create the desired fritter size. Cook until golden brown, about 2–3 minutes per side.
Remove fritters with a slotted spoon and drain on paper towel-lined plates.
