Unveiling the Ultimate Baked Potato Salad


Let’s follow the poolside trail to our kitchen! Here’s how to prepare the Ultimate Baked Potato Salad that will impress your guests, inspired by the tasty baked potato salad from Lauren Allen. 

Preparation time: 1 hour and 20 minutes

For 4 servings: 

Ingredients 
6 medium Russet potatoes
Olive oil for brushing
1 tablespoon of apple cider vinegar
1/2 cup mayonnaise
1/2 cup sour cream
Salt and pepper to taste
12 ounces of bacon cooked and crumbled
1 cup shredded sharp cheddar cheese
1/2 cup chopped green onions, with extra for garnish
Instructions:
Preheat your oven to 400°F (200°C).
Clean the potatoes and pierce each with a fork. Brush them with olive oil and season with salt and pepper.
Bake the potatoes for about an hour or until they are soft to the touch. Let them cool.
While the potatoes are cooling, cook your bacon until crispy, then crumble into small pieces.
Once cooled, cube the potatoes into bite-sized pieces. Approximately half of the potatoes should retain their skin for a genuine baked potato feel.
Sprinkle the warm potatoes with the apple cider vinegar and let them rest for 10–15 minutes to absorb the flavor.
Combine the mayonnaise and sour cream in a large bowl to create your dressing.
Add the potatoes, most of the bacon, cheddar cheese, and green onions to the bowl, saving some for garnishing. Stir gently until everything is well combined.
Season with additional salt and pepper to taste, then refrigerate for at least 3 hours before serving.
Garnish with the remaining bacon, cheese, and green onions before serving.
